Trentodoc with the aperitivo

Trentodoc is Trentino’s traditional-method sparkling wine. Serve a Brut at aperitivo with a savoury tart or mature cheese. For a festive cheese plate, try Trentingrana with honey, one of the denomination’s own pairing suggestions.

Soave for a fish supper

Young Soave from Veneto can be fresh and floral; wines that spend time on the lees have more body. The Consorzio’s suggested pairings include fish, vegetables and grilled dishes. Try it with grilled fish and vegetables on Christmas Eve. A richer sauce may need a more structured bottle.

Chianti Classico with salumi, Amarone with meat

Salumi and aged pecorino are among Fèlsina’s suggested matches for Chianti Classico. Serve them as a board before the main course or as part of a longer meal.

Amarone della Valpolicella is a dry red made from dried grapes. Its structure suits substantial meat dishes, game and mature cheese.

Moscato d’Asti or Recioto with dessert

Moscato d’Asti and sweet Asti Spumante are classic partners for panettone and pandoro. Check the style on the Asti label: the denomination includes different levels of sweetness.

With chocolate, try Recioto della Valpolicella. This sweet red is also made from dried grapes. The Consorzio recommends it with desserts and cheese as well.

Choosing for a shop or restaurant

Leave room for a dessert wine alongside the dry bottles in your Christmas range. Customers choosing panettone can then buy a wine for the same occasion.
